Lucilla Feliciano: When you have the time you can use it to stuff mushrooms, tomatos, and bell peppers. In my home we are vegetarian and vegan so we use quinoa as much as we can. I have even made stuffing using quinoa and put it into our bean burgers. Thank you for sharing your recipe. 06/15/2012
Trina Hernández: oh, you can definitely leave out the cheese, sometimes i forget to sprinkle it on top and it's still super tasty! and that mexi-grain salad looks like my kind of meal (avocados and black beans is what my heart is made of, I think, LOL) thanks for sharing :) 06/15/2012Influential
Lucilla Feliciano: I have quinoa, I have garbanzos, I have tomatos, and cilantro basically I have my hands on a majority of the ingredients. I will have to modify because my mate is vegan (no dairy). Looks good and simple. Here is another favorite of mine with quinoa if you like avocados and black beans http://theveganstoner.blogspot.com/2011/12/mexi-grain-salad.html…06/15/2012
